A traditionally made Japanese chef's knife. The blade consists of 33 layers of stainless Damask steel. The core layer is made of VG10 steel with a Rockwell hardness of 60-61°. It is protected on both sides by a layer of nickel and silver and 16 layers of damask steel have been forged on it. The knife constructed in this way offers the highest possible edge retention and at the same time offers maximum flexibility. The perfect high-gloss polish and a grip made of pakka and cocobolo wood, which fits ergonomically in the hand due to its chestnut shape, optimally complete this masterpiece. The surface structure, a tribute to traditional forging techniques, is pressed in by machine.
